and my passion for all things chocolate continues…
I’m a bit blue today. My birthday was fabulous and all (replete with a violet silk scarf and dinner at my favorite downtown eatery courtesy of the bff), but I heard some sad news from my father last night, so I’m a little woeful, a little quiet and contemplative. However, why not share my spoils from the weekend: one of Nigella’s recipes that I turned inside out and made my own. And who couldn’t do with a little Nutella during the holidays?!
Chocolate Cookies with Nutella Glaze
Ingredients:
Note: I use all organic/local ingredients
3/4 cup light brown sugar
1 cup flour
1/2 cup (1 stick) room temperature butter
1/3 cup good cocoa
1 egg
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1 cup bittersweet chocolate chips*
Glaze:
1/2 cup powdered sugar
1 tablespoon unsweetened cocoa, sifted
2 tablespoons boiling water
2 tablespoons of Nutella
Preheat the oven to 350°F. In a stand mixer fitted with a paddle attachment, cream the sugar and butter (I use a freestanding mixer for ease, but you can easily do this in a bowl with a wooden spoon and some gumption), then beat in the egg and vanilla. Mix the flour, cocoa, and baking powder in a bowl, and gradually beat into the creamed mixture. Warning: the batter will be sandier (translation: drier) than traditional cookie dough. Don’t fret or be tempted to add more liquid - the cocoa is what’s giving the batter this texture and it will ultimately yield a cookie that is crunchy on the outside and chewy on the inside. Finally, fold in the chips.
Using a rounded tablespoon measure, spoon out scoops of cookie dough and place on baking sheets lined with baking parchment or Silpat, leaving a little space in between each one. Bake for 12 minutes and then let them sit on the baking sheet for a couple of minutes before moving them to a cooling rack, with some newspaper on the surface underneath. Put the glaze ingredients into a saucepan and heat until combined together. Let cool completely before using. Using a teaspoon, zigzag the glaze over each cooling cookie.
Makes 24-28 cookies
*I used semi-sweet chocolate chips
