Long-time readers of my site know that I’ve spent years perfecting the chocolate chip pumpkin loaf. And I’ve learned over the years, the real magic happens in the kitchen when you make mistakes and take risks. Today, I can say with conviction that this chocolate chip pumpkin loaf is the best I’ve made. Here are my tweaks:
Instead of 3 cups of sugar, I used 2 cups. I found that the more savory the loaf, the more pronounced the chocolate chip flavor
Instead of 1 cup of vegetable oil, I used 3/4 cup. The loaf was still unbelievably moist
Instead of 1 cup of dark chocolate chips, I used 1 cup of bittersweet chocolate chips and 1/2 cup semi-sweet. The flavor was at turns sweet and semi-bitter, yielding an overall complexity to the taste
I added 1/2 cup of unsweeted coconut. The inclusion of depth of flavor I hadn’t anticipated.

Summer – Believe me when I say that this loaf DISAPPEARED from the kitchen this morning. People were digging it on a whole other level.

Okay, so it felt a bit like “Amelia Bedelia Bakes Bread.” First, I dumped the oil in a bit too soon. Then, I did not have nutmeg so I added more cinnamon, did not have teaspoons so I eyeballed the baking soda and salt…but- it was indeed delicious! (Picture to come). I also turned some into muffins- have yet to try those, but imagine they’ll be good too!

Amber – I’m beyond tickled! Can’t wait to see the pic. What I love about this recipe is the fact that it’s pretty much all in one pot. I fix all the dry and add it to all the wet ingredients.
